Ingredients

  • Oolong Leaves4 tablespoons
  • Cold Water2 cups

Directions

Combine 4 tbsp oolong leaves with 2 cups cold water and refrigerate 8-12 hours. Strain and keep chilled.

Notes

Cold-brewing avoids the bitterness of a hot over-steep while keeping the tannin that gives structure.
