  • Absinthe1 ounce
  • Champagne4 ounces

Directions

Pour absinthe into a chilled flute. Top slowly with cold Champagne until it louches to opalescent milky white.

Notes

Hemingway's recipe, published in the 1935 celebrity-cocktail collection 'So Red the Nose'. Pour the Champagne over the absinthe until it turns opalescent.
