A Paloma rebuilt on a grapefruit cordial and saline rather than tequila — salty, bitter-sweet, and structured, with fresh grapefruit and lime brightening it at the build.

- Grapefruit Cordial1 ounce
- Fresh Grapefruit Juice2 ounces
- Fresh Lime Juice½ ounce
- Saline Solution3 drops
- Soda Water3 ounces
- Grapefruit Wedge1 each
- Salt (rim)1 pinch
Directions
Add grapefruit cordial, fresh grapefruit juice, lime juice, and a few drops of saline to a salt-rimmed tall glass over ice. Top with soda and stir gently. Garnish with a grapefruit wedge.
Notes
A grapefruit cordial (grapefruit oleo cooked with a little citric and salt) gives the body and the pleasant bitterness; a few drops of saline solution sharpen it the way salt does on a real Paloma. No NA spirit needed.
