Gin-Style Botanical Shrub

A fruitless botanical shrub — juniper-forward with citrus lift and a savory backbone. Gin-adjacent, crisp, aromatic. Built entirely on the cold track.

Ingredients

  • White Sugar1 cup
  • Lemon (peel of, whole)1 each
  • Grapefruit (peel of, whole)1 each
  • Prosecco / Champagne Vinegar2 cups
  • Juniper Berries3 tablespoons
  • Coriander Seeds2 tablespoons
  • Celery Seeds0 teaspoon
  • Cardamom Pods5 each
  • Bay Leaves2 each

Directions

Put the lemon and grapefruit peels in the sugar and rest ~4 hours to draw a baby oleo-saccharum (no added water). Meanwhile, in a glass jar, combine the vinegar with the juniper, coriander, celery seed, cardamom, and bay leaves and steep on the counter. Add the oleo to the spiced vinegar, stir, and refrigerate overnight to dissolve and integrate. If sugar lingers, shake and rest cold longer or add a touch more vinegar. Strain before bottling.

Notes

Cold track per the House Shrub Method: citrus peels go into the sugar ~4 hrs to draw an oleo (no added water) while the hard spices cold-steep in the vinegar, then everything marries cold overnight. Ratio is 2 parts vinegar : 1 part sugar — the botanical load carries no fruit water, so it takes more acid, not dilution. Celery seed and cardamom are both loud; if a run reads aggressive, pull those back, not the citrus or juniper. White wine vinegar works in a pinch (a touch sharper — dial sugar up a hair or rest an extra day); avoid distilled white or cider, which bully the juniper. If sugar lingers after the rest, shake and rest cold longer or add a little more vinegar — never water.
