Hibiscus Concentrate

A strong steep of dried hibiscus, lightly sweetened — the ruby, tart base of Agua de Jamaica and a dozen floral coolers.

Ingredients

  • Dried Hibiscus Flowers1 cup
  • Hot Water4 cups
  • Sugar0.5 cup

Directions

Steep 1 cup dried hibiscus flowers in 4 cups hot water for 15-20 minutes. Strain, stir in 1/2 cup sugar while warm, and chill.

Notes

Brew it strong; it gets diluted at the glass. Over-steeping turns it astringent, so pull the flowers at 15-20 minutes.
