Hibiscus Refresher

Hibiscus tea (jamaica), lime, sugar, allspice. A Free Pour drink the color of garnet — tart, floral, faintly spiced, the drink Mexican grandmothers have been making for decades.

Agua de jamaica is the traditional Mexican hibiscus refresher, served from giant clay jars at street stalls across Mexico City and beyond. The drink predates European contact (hibiscus was already in Mesoamerica). It's the most-consumed non-alcoholic 'cocktail' across Latin America. The Free Pour application is just acknowledging what's already there.

Ingredients

  • Cold-Brewed Hibiscus Tea4 ounces
  • Fresh Lime Juice½ ounce
  • Simple Syrup½ ounce
  • Ground Allspice1 pinch
  • Lime Wheel1 each

Directions

Combine cold-brewed hibiscus tea, lime juice, simple syrup, and a pinch of ground allspice in a highball glass. Fill with ice. Stir to combine. Garnish with a lime wheel.

Notes

Brew the hibiscus strong (more flowers than you think — roughly 1/4 cup dried hibiscus per quart of water), cold-steep overnight for the best result. Hot-brewing extracts bitter compounds the cold-brew avoids. Sweeten lightly; the lime is doing the bright work.
