Jungle Bird

Dark rum, Campari, pineapple, lime, demerara. Aviary Bar, Kuala Lumpur Hilton, 1978 — bitter, tropical, perfect drink the world rediscovered around 2010.

Ingredients

• Blackstrap Dark Rum1½ ounces
• Campari¾ ounce
• Fresh Pineapple Juice1½ ounces
• Fresh Lime Juice½ ounce
• Demerara Syrup½ ounce
• Pineapple Wedge1 each

Directions

Combine all ingredients in a shaker with ice. Shake until well-chilled. Strain over fresh ice. Garnish with a pineapple wedge.

Notes

Campari is what makes this great. Without it, you have a Caribbean cocktail; with it, a dialogue between bitter Italian and bright tropical.
