Knickerbocker

A 19th-century rum cooler with curaçao, raspberry, and citrus over crushed ice. Fruit-forward and decorative — a proto-tiki drink from before tiki existed.

Ingredients

  • Aged Rum2 ounces
  • Orange Curaçao½ ounce
  • Raspberry Syrup½ ounce
  • Fresh Lime Juice½ ounce
  • Fresh Raspberries3 each
  • Orange Slice1 each

Directions

Build aged rum, orange curaçao, raspberry syrup, and lime juice over crushed ice in a goblet. Stir, then garnish with berries and an orange slice.

Notes

Documented in Jerry Thomas's 1862 'Bar-Tender's Guide' as the Knickerbocker. Build it over crushed ice and pile on the fruit.
