Masala Chai Sour

A spiced chai reduction shaken with lemon and aquafaba into a foamed, fragrant sour. Cardamom, clove, and black tea carry it where the spirit would.

Ingredients

  • Masala Chai Reduction2 ounces
  • Fresh Lemon Juice¾ ounce
  • Aquafaba¾ ounce
  • Ground Cinnamon1 pinch

Directions

Dry-shake chai reduction, lemon juice, and aquafaba. Add ice and shake again. Double-strain into a chilled coupe. Dust with cinnamon.

Notes

A strong masala chai reduced into a syrup-strength base gives both spice and body. The lemon cuts the sweetness; the foam makes it read as a proper sour.
