An oleo built from lime peels and mint with sugar — the structural backbone of a Free Mojito, carrying the body the rum used to.

Ingredients

  • Lime Peels6 each
  • Fresh Mint Leaves1 cup
  • Sugar1 cup

Directions

Muddle the peels of 6 limes and a handful of mint with 1 cup sugar. Rest 1-2 hours until syrupy, then strain.

Notes

The oleo holds the drink together so the build doesn't collapse to limeade; fresh lime and torn mint then re-brighten it at service.
