Morning Glory Fizz

A Scotch fizz with an absinthe edge — lemon, lime, sugar, egg white, and soda over smoky whisky. A 19th-century hair-of-the-dog with real architecture.

Ingredients

  • Blended Scotch2 ounces
  • Fresh Lemon Juice½ ounce
  • Fresh Lime Juice½ ounce
  • Simple Syrup½ ounce
  • Absinthe2 dashes
  • Egg White½ ounce
  • Soda Water2 ounces

Directions

Dry-shake Scotch, lemon, lime, simple syrup, absinthe, and egg white. Add ice and shake again. Strain into a tall glass and top with soda.

Notes

Documented by Jerry Thomas and a fixture of Victorian bars. The absinthe and Scotch combination is the surprise that makes it.
