Pisco Sour

Pisco, lime, sugar, egg white, Angostura. Peru's national drink — Chile claims it too. Foamy, sharp, beautiful.

Ingredients

  • Pisco (Peruvian)2 ounces
  • Fresh Lime Juice¾ ounce
  • Simple Syrup¾ ounce
  • Egg White1 each
  • Angostura Bitters (garnish)3 dashes

Directions

Combine pisco, lime, syrup, and egg white in a shaker. Dry-shake 10 seconds. Add ice and shake 10 more. Double-strain into a chilled coupe. Garnish with 3 dashes of Angostura on the foam.

Notes

Peruvian pisco quebranta or acholado. Angostura dots on the foam are the signature.
