Ramos Gin Fizz

Gin, lemon, lime, sugar, cream, egg white, orange flower water, soda. Henry Ramos, New Orleans, 1888. Required 12 minutes of shaking originally.

Ingredients

  • London Dry Gin2 ounces
  • Fresh Lemon Juice½ ounce
  • Fresh Lime Juice½ ounce
  • Simple Syrup¾ ounce
  • Heavy Cream1 ounce
  • Egg White1 each
  • Orange Flower Water3 drops
  • Soda Water2 ounces

Directions

Combine all ingredients EXCEPT soda water in a shaker. Dry-shake hard for at least 90 seconds. Add ice and shake another 90 seconds. Strain into a chilled highball. Slowly top with soda — the foam should rise above the rim.

Notes

Orange flower water non-negotiable and easy to overdo — just a few drops. Signature foam comes from extended shaking; modern bars use a hand blender.
