Variant

America's first cocktail, depending on who you ask. Whiskey or cognac, sugar, Peychaud's, Angostura, absinthe rinse, lemon peel.

Ingredients

  • Rye Whiskey2 ounces
  • Demerara Syrup1 teaspoon
  • Peychaud's Bitters3 dashes
  • Angostura Bitters1 dash
  • Absinthe (rinse)0.13 ounce
  • Lemon Peel (expressed and discarded)1 each

Directions

Chill a rocks glass with ice and water. In a mixing glass, muddle sugar with Peychaud's and Angostura. Add base spirit and ice; stir well. Discard ice and water from the rocks glass, rinse with absinthe. Strain mixture in. Express a lemon peel and discard.

Notes

The original 1838 used cognac. Phylloxera destroyed the cognac supply and the drink shifted to rye. Both legitimate — flip with ↻.
