Sherry Flip

A whole-egg flip on cream sherry — sherry, sugar, and a whole egg shaken to a froth and dusted with nutmeg. Silky, nutty, and warming.

Ingredients

  • Cream Sherry2 ounces
  • Simple Syrup½ ounce
  • Whole Egg1 each
  • Grated Nutmeg1 pinch

Directions

Dry-shake cream sherry, simple syrup, and a whole egg. Add ice and shake hard again. Strain into a small wine glass. Grate nutmeg over the top.

Notes

A classic flip dating to the 18th century, when flips were heated with a hot iron. Uses the v1.7 fortified-wine base. An after-dinner or cold-weather drink.
