Spiced Cherry Shrub

A colonial-style cherry shrub with clove and cinnamon — a way to preserve summer cherries that long predates refrigeration.

Ingredients

  • Pitted Cherries1 cup
  • Sugar1 cup
  • Whole Cloves3 each
  • Cinnamon Stick1 each
  • Red Wine Vinegar1 cup

Directions

Macerate 1 cup pitted cherries with 1 cup sugar, 3 cloves, and a cinnamon stick for 48 hours. Stir in 1 cup red wine vinegar. Strain and bottle.

Notes

Sour cherries make the best shrub but sweet cherries work with a little extra vinegar. The spice steeps in during maceration.
