Strawberry-Balsamic Shrub

A strawberry shrub built on aged balsamic for a savory, wine-like depth. Pairs naturally with black pepper.

Ingredients

  • Strawberries1 cup
  • Sugar0.8 cup
  • Aged Balsamic Vinegar0.5 cup
  • White Wine Vinegar0.5 cup

Directions

Macerate 1 cup hulled, sliced strawberries with 3/4 cup sugar for 24 hours. Stir in 1/2 cup aged balsamic and 1/2 cup white wine vinegar. Strain and bottle.

Notes

The balsamic does the souring and adds complexity a plain vinegar can't. Halve the balsamic with white wine vinegar if it reads too dark.
