Tamarind Base

Tamarind pulp simmered and strained into a sweet-sour concentrate — the tangy, dark base of Tamarindo.

Ingredients

  • Tamarind Pulp1 cup
  • Water4 cups
  • Sugar0.8 cup

Directions

Simmer 1 cup tamarind pulp with 4 cups water and 3/4 cup sugar for 15 minutes, breaking up the pulp. Strain through a sieve, pressing the solids, and chill.

Notes

Seedless tamarind paste is easiest; block tamarind needs soaking and de-seeding. Push the pulp through a sieve for a smooth base.
