Tom Collins

Gin, lemon, sugar, soda. A long, refreshing fizz — the spec from which a thousand Collins variations descended. Named for a hoax going around New York bars in 1874.

Ingredients

  • Old Tom Gin2 ounces
  • Fresh Lemon Juice1 ounce
  • Simple Syrup½ ounce
  • Soda Water3 ounces
  • Lemon Wheel1 each
  • Brandied Cherry1 each

Directions

Combine gin, lemon, and syrup in a Collins glass. Fill with ice. Top with soda. Stir briefly. Garnish with a lemon wheel and a brandied cherry.

Notes

Old Tom gin for the historically correct version. Don't over-stir or you'll kill the fizz.
