Canchánchara

Cuba's oldest drink — aguardiente or rum with honey and lime over ice. A 19th-century independence-fighter's restorative, rough-edged and honest.

Ingredients

  • Aged Rum2 ounces
  • Honey Syrup½ ounce
  • Fresh Lime Juice½ ounce
  • Warm Water½ ounce
  • Lime Wheel1 each

Directions

Stir honey with lime juice and a little warm water in a rocks glass until dissolved. Add rum, fill with cracked ice, and stir. Garnish with a lime wheel.

Notes

A genuine Cuban historical drink, traditionally made with aguardiente (cane spirit); aged rum is the common modern stand-in. Honey, not sugar, is the binder.
